Dough roll cake - Cozonac
The "cozonac" is a very good roll cake, stuffed either with Turkish jelly candy and raisins or with a walnuts cocoa cream .
- 2 cups wheat sifted all-purpose flour
- 11/2 cup white sugar
- 4 eggs
- 8 tablespoons melted butter
- 1 cup warm milk
- 2 (0,6 ounce) cakes compressed fresh yeast
- a bit of salt
- vanilla
- 1/4 cup raisins soaked in 1 tablespoon rhum
- mixed orange or lemon zest


- 4-5 cubs colored Turkish jelly candy

- Walnuts cocoa cream : 1 cup ground walnuts, 4 tbs. white sugar, 1 tbs.cocoa and 2 whites .
For the dough : mix the yeast with a spoon of sugar, until it gets liquid, then add a spoon of flour and stir well, like beating . Cover it with a napkin-cloth and put it in a warm place to rise, until foamy, for 15 minutes.

Dip the raisins into the rhum in a small cup.

Sift and measure the flour into a large bowl. Make a well in the flour, pour the warm milk, yolks mixed with sugar and vanilla and the grown yeast into the well. With one hand, mix all, then mix dough in bowl using swinging rotary motion. Gradually form dough into smooth ball, then knead in bowl until it doesn't stick on hands anymore. Pour a bit of warm melted butter over the dough and knead well, then repeat until all butter is added . Add raisins and rhum. Form a dough ball, cover with a napkin-cloth and allow dough to rise at room temperature for 2 hours. Do not set bowl on radiator or in hot place. Keep away from draughts. Allow dough to rise until doubled in bulk.

Meanwhile you can make the walnuts stuffing. Whisk the whites until fluffy , add sugar and whisk more, then add cocoa, ground walnuts and rhum.


Cut the Turkish jelly candies in small splices.

Spread  flour on the table, put dough on the table and punch it down, until it has the form of a sheet of paper.


Spread small cut pieces of Turkish jelly candy or a walnuts cocoa cream all over.

Then you roll it and put it in a special 5x13 inch pan, coated with butter and flour or baking paper, so the cake won’t stick.



The new Teflon and silicone pans don’t need coating. The roll must fill half of the form, because it will double it’s volume after rising. You’ll have to let it stay another hour to rise, covered with the napkin-cloth. Spread a bit of yolk on the roll, using a paintbrush, spread white sugar on top and put it in the oven for 45 minutes, at medium heat 180 degrees.

Take the cake out of the pan and set it on one side. Let cool in a warm place.


If you have a food processor you pour the flour in the larger bowl, add sugar mixed with the yolks, salt, vanilla and orange peel, the yeast after it has grown. Turn on the food processor and pour the warm milk and melted butter, until it forms a ball inside the bowl. I let the ingredients in the robot mix in there for 1 minute. Then you have to put the dough in a large bowl, cover it with a napkin-cloth and leave it in a warm place for 2 hours, to double its volume. Continue to make the dough cake as written above.
Cut the dough cake when cold . Enjoy!
